Title: Ritz Cracker Cake

6 Egg whites
2cSugar
60 Ritz crackers, crushed
1cBroken nutmeats
1cnPineapple tidbits
1cnFruit cocktail
1cChopped maraschino cherries
2pkDream Whip
8ozPhiladelphia cream cheese

Beat egg whites to from peaks, gradually add sugar, fold in crushed Ritz crackers. Add broken nutmeats. Bake for 25 minutes at 250 degrees in a well greased 9 x 13 inch pan. Cool. This is the bottom layer. Drain pineapple, fruit cocktail and cherries. Mix and set aside. Whip Dream Whip, add cream cheese at room temperature. Fold this mixture into the fruit. This is the second layer. Pour over cooled bottom. Let set in the refrigerator overnight. Randy Rigg
